Mmmm... leftover yellow squash patty sandwich. Slightly odd: yes. Still rather delicious, if I might say so: absolutely.
And in other strange food news, by popular demand (Ellen's), here is the recipe for Ter's Rice, Peanut Butter & Carrot Loaf, which sounds a little bit like something out of MFK Fisher's war-ration recipes, but is wonderfully tasty, filling, and good for you (especially if you make it with brown rice). Fear not! It tastes great! Ellen will vouch for this.
Combine, and bake at 350 for one hour:
2 c. cooked rice
3 c. shredded carrots
1 c. peanut butter
2 c. milk
2 eggs
1 grated onion
1/2 tsp sage
2 tsp salt
2 tbsp butter
I like to eat it with petit green peas.

how do you make yellow squash patty sandwich? And I was biking again the other day, and almost fell off 'cause I was saying hello to some Korean kids. I love the looks I get when I shout out "annyeoung haseo!" and they're like, "Wha'? huh? White lady speaking Korean?"
The patties were yellow squash, onion, egg, cottage and cheddar cheese, cracker crumbs, salt and pepper, fried in a little bit of olive oil. They're good hot and later the leftovers make good sandwiches!
my mom used to make this cassarole. Only she put warm stewed tomatoes on top of it as well. Was pretty good. Kinda makes me hungry for it...
